Mostly corporate, and priced for it
Chesterfield’s barbecue trade is heavily weighted towards work: staff summer days at Dunston Innovation Centre and Tapton Park, family days on the Markham Vale and Holmewood estates, and long-service or retirement events at the bigger employers along the junction 29 corridor.
That shapes how it is usually booked. There is a fixed budget, a fixed headcount and a fixed hour when everyone stops. All three packages are published per head, so a manager can put a number in a spreadsheet without waiting on a quote, and a credit account means the whole thing lands on one invoice at the end of the month.
The rest is private: garden parties in Walton, Brampton and Hasland, christenings and big birthdays at the cricket and football clubs, and summer fairs at schools across the town.
What we need on the day
About three metres by five of genuinely level ground for the grills, and no steps between there and where guests will eat. The west side of Chesterfield is rarely flat, so it is worth sending a photo of the spot before you book rather than finding a terrace wall in the way on the afternoon.
A wet-weather plan is the other thing, and it is about the guests rather than the chefs. The grills run under a gazebo whatever the weather; a queue of eighty people standing in it is what actually spoils a barbecue. A marquee, a clubhouse or a barn solves it.
Sides come with every package: Sadlergates coleslaw, mature cheddar slices, onions, kachumber salad and baby roasts with sauce vierge, with ketchup, American mustard and BBQ sauce. Children eat at £8.00 a head with hot dogs and 4oz cheeseburgers on the same booking.
